Documents: eSign prefill document fields before sending

Currently, when setting up a new eSign document, all fields are left empty for the recipient to fill in.
This feature would allow prefilling document fields before sending, either automatically using existing information in the system (such as name, ID, or other stored data) or by manually entering values in advance.
